Kosher Cuisine: Kosher food is prepared according to strict Jewish religious laws. Pork, clams, flat-fish, sturgeon and eel are forbidden. Meat and dairy products are not mixed and this includes having separate plates and eating utensils for the two types of food. Menus in Jewish restaurants include a choice of entrees, including forshmak (baked chopped meat or herring with sliced potatoes and onions) and stuffed fish.
